Higher in nutrients and fat than white meat, these cuts retain their flavor and moisture when cooked and can be used in a variety of dishes, from slow-cooked soups, stews and one-pot dinners like Arroz con Pollo, to fried and grilled dishes, like skewers and classic jerk.
